This paper presents an approach to identify hygienic and ergonomic requirements for the development of food processing machines by an extensive process analysis. For the development of such machines, it is essential to detect hygiene risks in order to consider them as early as possible. Since hygiene risks occur in processes within the life cycle processes of the machine, they can be analysed using the detailed process model. The extended process model enables the detection of unwanted interactions between the process, the user and the product. Thus, the proposed approach allows extracting hygienic and user oriented requirements comprehensively and uses the result a basis for the development process.
